Rigorous selection of the raw materials, together with precise control of the toasting cycles, result in an unrivalled freshness of aroma.
Role in Color enhancement
Fraîcheur as very little effect on the color of white wines.
Characteristic aromas and flavors
If your wine is fruit-driven then using freshness will result in more complex, lifted aromas.
Effects on structural mouthfeel
When used during fermentation - increases palate sweetness
If used during maturation - results in a fuller body and mouthfeel.
Winemaking applications
- Increase aromatic freshness in white wine
- Creates a more complex, intense range of aromas
Timing and rates of use
Depending on the desired objective :
- Use wood chips during fermentation and occasionally during maturation, depending on desired outcome.
- Recommended contact time : 2 months minimum. Depending on wine characteristics, the dose should vary between 2g/l and 10g/l.
