Product description
The Double Chauffe range is a range of heated woods. Tannins are eliminated using a physical process that complies with the aromatic characteristics provided by heating. Double Chauffe 310 is heated to a unique level to obtain a specific result.
Effect on roundness
High heat modifies the components of the wood. Consequently, coloured components that appear during the Double Chauffe 310 heating process contribute to an increase in colour of the wines.
Characteristic aromas and flavors
While the fruity aroma is still enhanced, it is enriched with notes linked to the heating process.
Notes are centred on coffee and roasted accents that are very long at the finish.
Effects on structural mouthfeel
The natural sweetening elements of wood are less abundant than in Green Wood but still contribute to increasing sweetness and harmony.
As tannins have been eliminated, the tannin structure has not been substantially modified. Above all, the Double Chauffe 310 process provides sweetness.

- Correction of the aromatic range toward coffee/roasted accents
- Increased sweetness and roundness
Timing and rates of use
Depending on the desired objective :
- Between alcoholic and malolactic fermentations or during post-malolactic elevage.
- According to the characteristics of the wine or must, doses vary from 0.5 g/l to 2 g/l.
