Bois Frais is an untoasted oak chip. As such, it possesses all the characteristics tied to its botanical and geographical origins as well as those derived from the seasoning it has received.
Role in Color enhancement
Bois Frais simultaneously enhances red wine color by protecting, then stabilizing anthocyanins.
When employed during fermentation or in early elevage, resulting color is more intense and more stable.
Characteristic aromas and flavors
Boise France employs a rigourously controlled sourcing methodology in order to procure wood which enhances wine's fruit expression.
Coconut and citrus notes emerge and enrich the wine's natural fruit expression. Bois Frais does not impart aromas normally associated with wood.
Effects on structural mouthfeel
Oak's natural polysaccharides lend sweetness to the wine, even as extraction reinforces tannic structure in the mouth.
